U.S. Grade A or (U.S. Fancy) is the quality of canned mushrooms that possess similar varietal characteristics such as, a normal flavor and odor; good color, mushrooms that are practically uniform in size and shape, except for the style of stems and pieces; that are practically free from defects. All these characteristics are carefully verified and then graded in accordance with the grading system. The total score from the result is usually not less than 90 points; if the canned shiitake mushroom are fairly uniform in size and shape and fall within the applicable styles and if the total score is not less than 90 points, then it is of good quality and a grade A.

U.S. Grade B or (U.S. Extra Standard) is the quality of canned mushrooms that possess similar varietal characteristics such as a normal flavor and odor, a fairly good color, fairly uniform in size and shape, except for the style of stems and pieces; that are fairly free from defects. All these characteristics are carefully verified and then graded in accordance with the grading system. The total score from the results is usually not less that 80 points: the canned mushrooms may fail to meet the requirements for the U.S. Grade B due to factors regarding uniformity of size and shape for the applicable styles if the total score is not less than 80 points.

A substandard grade is the quality of canned mushrooms that fail to meet the requirements of U.S. Grade B.
